This Linguine with Tuna, Capers, Spinach, and Sun-Dried Tomatoes is a weeknight favourite that brings incredible flavours to your table. Inspired by Gennaro Contaldo’s Simple Tuna Pasta, this dish features linguine tossed with sautéed sweet onions and garlic, high-quality tuna in olive oil, fresh spinach, capers, and sun-dried tomatoes. A splash of pasta cooking water helps create a deliciously cohesive sauce. Quick, easy, and packed with taste, it’s a delightful meal you’ll want to make again and again.
Cook the linguine according to package instructions until al dente. Reserve 1/4 cup of the pasta cooking water and drain the rest. Set aside.
Prepare the Sauce:
Ina large skilletheat a tbsp of extra virgin olive oil (if needed) over medium heat. Add the chopped sweet onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for an additional 1-2 minutesuntil fragrant.
Add Tuna and Vegetables:
Add the entire can of tunaincluding the olive oil to the skillet. Stir to combine with the onions and garlic.
Add the chopped spinachcapers, and sun-dried tomatoes. Cook for 2-3 minutes, until the spinach has wilted and the ingredients are well combined.
Combine with Pasta:
Add the cooked linguine to the skillettossing to combine with the sauce.
Pour in the reserved pasta cooking waterstirring to help the sauce coat the pasta evenly.
Season and Serve:
Season with freshly ground pepper to taste. Serve immediately.
Notes
Sprinkle with fresh Italian parsley, if desired. Enjoy!
